PMS brownies (GF & DF)
HOT TIP : Cacao can be really beneficial during your period because it boosts mood, provides a gentle energy lift, and is rich in magnesium to help reduce cramps. It also contains iron, which supports blood loss during menstruation, and has anti-inflammatory properties that can alleviate bloating and discomfort. Not to mention the emotional comfort of a delicious brownie!!!
Ingredients
2 eggs
1 TBSP olive oil
1/2 cup almond butter (I use Once Again creamy)
1/4 cup pure maple syrup (I prefer to add lots of choc chips and keep the recipe not overly sweet, but for a sweeter brownie, you can change this to 1/3 cup)
1/4 cup coconut sugar (same applies here for sweetness level. You can adjust both maple syrup and coconut sugar or either or)
1/2 cup almond flour
1/3 cup cacao powder
dark chocolate chips- I always measure these with my heart:) (I use Guittard brand to avoid refined sugar, they’re sweetened with coconut sugar instead)
Instructions
Preheat your oven to 350°F and grease or line with parchment paper an 8x8 baking dish.
In a bowl, mix together all wet ingredients until fully combined.
in a separate bowl mix together all dry ingredients. Slowly incorporate into the wet.
Once brownie batter is mixed, add in your dark chocolate chips. Pour batter into pan, sprinkle more chocolate chips on top and bake for 15-20 min (probably will be somewhere closer to 20 min, but I would check them a few before. I like to stick a knife in to test the gooeyness level)
